Ingredients
  

Caramelised Onion Raita

  • 2 tablespoon ghee
  • 1 thinly cut onion
  • 1 tsp salt
  • 2 tsp sugar
  • 1/4 teaspoon chilli powder
  • 2 tsps Jeera or cumin
  • 5 tablespoons of curd or yogurt

Potato Raita

  • 2 potatoes
  • 5 tablespoons of curd
  • 1/4 teaspoon turmeric
  • 5 tablespoons water
  • fresh coriander
  • 1 tablespoon oil
  • 2 teaspoons mustard seeds
  • 1 sprig curry leaves
  • 2 dried red chillies

Mix Veg Raita:

  • 5 tablespoons curds
  • 2 tablespoons water
  • 1/2 grated cucumber
  • 1 cut tomato
  • 1/2 cut onion
  • 1 cut green chilli
  • 1/4 tsp chilli powder
  • 1 tsp roasted jeera powder

Boondi Raita:

  • 1/2 a packet Haldiram Boondi
  • 1 tsp roasted jeera powder
  • 1/4 tsp chilli powder
  • fresh coriander
  • 1 cut green chilli
  • 1 tsp roasted jeera powder

Instructions
 

Method

    Onion Raita Steps:

    • Add 2 tablespoon ghee
    • Add 1 thinly cut onion
    • Add 1 tsp salt, releases water
    • Add 2 tsp sugar, helps caramelise
    • Add 1/4 teaspoon chilli powder
    • Add 2 tsps Jeera or cumin
    • Caramelise until onion turns brown
    • Add 5 tablespoons of curd or yogurt
    • Mix it
    • Add the caramelised onion
    • Whip it

    Potato Raita Steps:

    • Pressure cook 2 potatoes
    • Peel and mash them
    • Add 5 tablespoons of curd
    • Add 1/4 teaspoon turmeric
    • Add 5 tablespoons water & mix
    • Add fresh coriander
    • Add mashed potato and mix
    • Add 1 tablespoon oil in a tadka pan
    • Add 2 teaspoons mustard seeds
    • Add 1 sprig curry leaves
    • Let it splutter
    • Add 2 dried red chillies
    • Transfer to potato raita

    Mix Veg Raita:

    • Add 5 tablespoons curds
    • Add 2 tablespoons water
    • Add 1/2 grated cucumber
    • Add 1 cut tomato
    • Add 1/2 cut onion
    • Add 1 cut green chilli
    • Mix well
    • Add 1/4 tsp chilli powder
    • Add 1 tsp roasted jeera powder
    • Garnish with fresh coriander

    Boondi Raita:

    • Add 1/2 a packet Haldiram Boondi
    • Add 1 tsp roasted jeera powder
    • Add 1/4 tsp chilli powder
    • Add fresh coriander
    • Add 1 cut green chilli
    • Add 1 tsp roasted jeera powder
    • Add Boondi
    • Mix well
    • Add curds to Boondi Raita before serving
    • Mix and serve!
