Herby Garlic Buns

The name itself has a flavour, the aroma when this is being baked is amazing. The day I baked this at home all the buns were over, none remained. They came out really soft, even though it is 80% whole wheat and 20% all purpose flour. Interestingly the herbs I have used in this recipe are from a website called Gourmet Garden. I have always preferred it in Bangalore, they have really fresh produce, the quality is great. My Pizza Party Recipe has several ingredients from the same website, the taste is so authentic. I have used Gourmet Garden Italian Basil and Fresh Oregano.  The bun can be made into a herby dinner roll as well, I made 6-7 buns. The recipe is very versatile, the same recipe can be used to make an entire loaf of bread as well. After I finished shooting the video I actually made a loaf of herby bread. Several recipes I had tried before perfecting this recipe, whole wheat bread never came soft. This can be eaten without toasting as well, it stays that soft. Try getting a good garlic bread seasoning mix. Do not use whole garlic cloves, it doesn’t absorb as well. It needs to be dehydrated or powdered to taste well. You can use any herbs you want, but keep it as dry as possible, the dough is a very well hydrated any extra water can spoil the consistency.  Usually we do not use garlic in many preparations at home, but this is an exception, everyone loves it. Prep time is only 20 minutes, idle time is about an hour and baking time is about 15-20 minutes at 170C.  Let me know if you make this recipe? Ingredients
  

Liquid ingredients-

  • Half cup milk ideally skimmed
  • Half cup hot water. It needs to be warm to touch not boiling
  • 1/4 cup melted unsalted butter
  • 1 tablespoon butter separate

Dry ingredients-

  • 2 and 1/4 teaspoon active dry yeast
  • 2 cups whole wheat
  • 1 cup maida or all purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 1/2 cup cut Fresh Italian Basil
  • 1/2 cup Fresh Oregano
  • 2 teaspoons garlic bread seasoning

Instructions
 

Steps for Making Herby Garlic Bread

  • Warm half a cup water and half a cup of milk for a minute in a mug, it needs to be warm to touch
  • Melt 1/4 cup unsalted butter in another mug, having a microwave oven is rather convenient
  • Add 2 tablespoons of sugar in a bowl
  • Add 2 and 1/4 teaspoon active dry yeast
  • Mix the water and milk mixture with the melted butter, stir well
  • Mix the water, milk and butter mixture, with the yeast and sugar well
  • Cover the bowl with a plate and keep in a warm place for around 10 minutes
  • While yeast is blooming cut herbs, I have used 1/2 cup Gourmet Garden Italian Basil and 1/2 cup Oregano
  • In a deep bowl add 2 cups whole wheat flour and 1 cup all purpose flour,
  • Add 2 teaspoons salt and mix well
  • Add cut herbs and mix well
  • Pour bloomed yeast
  • Add garlic bread seasoning mix
  • Start kneading the dough
  • Keep a tablespoon of butter aside for kneading the dough
  • Knead the dough till it comes away from the edges of the bowl, cover it with some oil.
  • Cover the bowl in cling film and keep aside in a warm place for 45 minutes to an hour to double
  • Pre heat oven for 20 mins at 180 C
  • Dust a surface with flour and knead the proofed dough, and roll into a log
  • Add a tablespoon of olive oil while kneading the dough
  • Continue kneading the proofed dough, and roll into a log
  • Divide the dough, shape the buns by tucking them in, place on a baking tray
  • Now we need to milk and butter wash them, take quarter cup milk and a tablespoon of room temperature butter and mix well
  • coat with milk and butter mixture to prevent from dehydrating
  • Wrap it with cling film and keep next to the oven for 15 minutes, for shape proof
  • Bake in a preheated oven for 15-20 minutes. Keep an eye out, don’t go anywhere else!
  • Let the baked buns cool down for 20 minutes on a wire rack.
  • Transfer to a plate, while it is still hot add butter and enjoy it with a cup of coffee or tea!
