Steps to make Hariyali Baby Corn

  1. In a vessel add water and add 20 cleaned baby corn
  2. Add 1 tablespoon of salt
  3. Boil for 8-10 minutes
  4. In a blender jar add 2 cups fresh coriander
  5. Add 1 cup pudina or mint leaves
  6. Add 3-4 green chillies, you can add more based on how spicy you like it
  7. Blend it well with a little bit of water, add it to a bowl
  8. Add 1 tablespoon garam masala
  9. Add 1 teaspoon ginger powder
  10. Add 1 teaspoon chilli powder
  11. Add 1/2 a tablespoon of chaat masala
  12. Mix all ingredients well
  13. Add salt per taste
  14. Add the boiled baby corn
  15. Coat them well and let it marinate for 2 hours
  16. The taste gets absorbed well
  17. Pre heat oven to 200C
  18. Take a pan and add baking paper or aluminium foil
  19. Using any baking dish, place the marinated baby corn
  20. I’ve used Bamboo skewers
  21. Add only 1 baby corn per stick, this makes it firm
  22. Place them apart so they don’t touch
  23. Grill using the convection mode for 10 minutes
  24. Later on select the top or bottom elements individually for a further 5-10 minutes
  25. Take the skewers out
  26. Coat with fresh lemon or nimbu juice
  27. Serve hot, goes perfectly well with tea or coffee!
