Steps to make Onion Pakoda

  1. Cut 3 medium onions in half and then thinly slice it
  2. Cut 6 green chillies finely, we like it spicy!
  3. Cut 1/2 cup fresh coriander finely
  4. Cut 5 sprigs curry leaves finely
  5. Cut 2 inch ginger finely
  6. Transfer the cut onions to a deep dish or parath
  7. Add the cut fresh coriander
  8. Add the cut curry leaves
  9. Add cut ginger
  10. Add cut green chillies
  11. Add 2 cups besan or gram flour
  12. Add salt per taste
  13. Add 1 teaspoon chilli powder
  14. Add 15 broken cashews
  15. Start mixing it, you need to squeeze and mix
  16. This helps in getting all the natural moisture out
  17. Add 2 tablespoons of boiling oil
  18. Mix using a spatula, when it is cool start mixing it with your hands
  19. You can add a sprinkle of water for binding (special guest appearance mummy!)
  20. I would suggest oiling your hands before shaping
  21. Start forming rounds, I made them a small lemon size
  22. Start heating the oil now
  23. Transfer the round pakoda’s into the hot oil
  24. You need to cook them at a slow low heat
  25. This helps in cooking it on the inside and giving the perfect crunchy texture outside
  26. I got around 20 pakoda’s with this quantity!
  27. Enjoy them hot in the rainy season! I had them with green chilli and tomato sauce!
