Warm and Tasty Lemon Coriander Soup

The first time I made this soup, I had no idea how to use Lemongrass. I really wanted to use it for something exotic, but I had no idea what it could be used for. I had heard that people used it to make tea and I had this clear soup that tasted amazing. I decided to look up clear soup recipes, I didn’t find too many vegetarian recipes. 

That is how this recipe came along, I had made masala bread sometime ago and I had seen the use of coriander stems for the real coriander flavour. So I made this recipe, first the stalk and then the veggies. I’m not fond of soups which have no veggies in them, so I’ve added only onions, spring onions, ginger and carrot. 

The soup doesn’t even require a blender, you can have it ready in 20 minutes, that included cutting, cooking thr stalk and the soup with veggies.
