Pressure cook and mash 500 grams of potato
In a kadai or pan add 4 tablespoons of olive oil
Add 2 teaspoons Jeera or Cumin
Add 2 bay leaves
Add 2 teaspoon of kalonji or nigella seeds
Add 1 tablespoon coriander powder
Add 2 tablespoons Garam Masala
Add 1 teaspoon hing and mix
Add 1/2 cup peas
Stir fry it
Add 1/4 teaspoon haldi or turmeric
Add 1 teaspoon chilli powder
Add salt per taste and mix well
Add half a cup water
Add 2 tablespoons kasuri methi or dried fenugreek leaves and mix
Add the mashed potatoes, I added them in 2 parts
Mix the masala well
Mix the aloo or potatoes again
Mix all ingredients well
Add half a cup more of water
Mix well, again
Add 2 more tablespoons kasuri methi or dried fenugreek leaves
Mix for 2 minutes
Cover with lid and simmer for 4 minutes
Right before serving add juice of 1 lemon and mix it well
Enjoy with freshly prepared Roti
