Baked Sweet Potato
Several years ago when we had been on a family trip to Ooty, we bought several spices. Some we definitely had heard off and some that we had never used. Star anise was one of them we had never used, the aroma is amazing. We had no idea what to use it for, so my mom and I made star anise spiced sweet potato. We had deep fried it, this is something I really don’t like. So I try to bake everything possible, rather than deep frying. This recipe is a mix of a few recipes that I’ve made over the past few years. Winter time here Sweet Potato is available in plenty and it tastes amazing just boiled as well.

- 500-600 grams of peeled and diced sweet potato
- 3 tablespoons olive oil
- 1 teaspoon freshly ground pepper
- 2 ground star anise
- 1/2 cup of diced fresh thyme
Steps to make Baked Sweet Potato
Preheat oven to 230C for a minimum of 20 minutes
Dice 500-600 grams of peeled sweet potato
In a rectangular baking dish add a tablespoon of olive oil
Add the sweet potato on the dish
Add 2 tablespoon more olive oil
Add 1 teaspoon freshly ground pepper
Add 2 ground star anise
Next add 1/2 cup of diced thyme, toss all the ingredients in the dish
Sprinkle salt per taste on top
In your oven, select only the top heating element mode
Keep the dish in the middle row, select only the top heating element mode
Roast in the oven for 30-45 minutes
Bring the dish out every 10 minutes and toss all the ingredients around, this helps in roasting them uniformly
Take them out of the dish, toss them and then serve
Add juice of a lemon before serving
