In a pan add 4 tablespoons of unsalted butter, let the butter melt
Add 4 tablespoon of maida or all purpose flour and mix well
It needs to bubble slightly
Next add 2.5 cups of heated milk and keep stirring
Add 2 teaspoons of freshly ground pepper
Add half a grated nutmeg
Add 1 teaspoon of salt
Add 1 cup of freshly grated cheddar cheese
Add 2 tablespoons of pizza or pasta seasoning
Turn off and let it cool
Pre heat your oven to 180C for 20 minutes
Boil 250 grams of pasta of your choice
Follow the instructions on the packet
Drain the pasta add 1 tablespoon of olive oil to coat
I’ve used 4 buttered ramekins
Put some pasta in a ramekin or a baking dish and add the pasta sauce
I’ve added 4 jalapeños, since we like spicing things up!
Add the sauce then add some more pasta on top
Top it off with some more sauce
Season it on the top
You can add some boiled veggies as well
Add them into the preheated oven and bake for about 20-25 minutes
After it starts to brown take it out
Let it cool before eating
