Loaded Fries with Cheesy Sauce

Ingredients
  

For the Fries

  • 4 cups frozen fries
  • Oil for frying

For the Cheddar Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons maida all-purpose flour
  • 1 cup milk + 1/2 cup extra
  • 2 teaspoons freshly ground black pepper
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1 cup grated cheddar cheese
  • Toppings
  • Fresh basil leaves
  • Red chilli flakes
  • JalapeƱos
  • Grated Parmesan

Instructions
 

  • Fry frozen fries in hot oil until golden brown. Drain on kitchen tissue.

For the cheese sauce:

  • Melt butter in a pan.
  • Add maida and mix well for 1 minute.
  • Gradually add 1 cup milk while stirring continuously until smooth and thickened.
  • Add black pepper, oregano and salt.
  • Add grated cheddar and stir until melted. Add remaining 1/2 cup milk to adjust consistency.
  • Plate the hot fries. Garnish with fresh basil and red chilli flakes.
  • Add jalapeƱos and grate Parmesan over the top.
  • Pour cheese sauce generously over the fries. Serve extra sauce in a bowl for dipping.
