In a bowl add 1/2 cup water and 1/2 cup milk
Warm it in a microwave oven
In another bowl add 1/4 cup butter and 2.5 tablespoons sugar
Melt it in the microwave
Mix them
Add 2 and 1/4 teaspoons active dry yeast
Mix well, let it rest for 10 minutes
In a mixing bowl, add 2 cups whole wheat flour
Add 1 cup maida or APF
Add 2 teaspoons salt
Add 1 teaspoon ginger powder
Add 2 tablespoons cut curry leaves
Add 1 diced green chilli
Add 1/2 teaspoon pepper powder
Add 1/2 cup cut Dil Leaves
Mix with your hands
Yeast should’ve bloomed, mix the yeast mixture in
Knead till the dough doesn’t stick to the bowl anymore, takes around 3 minutes
Transfer to a bowl coated in ghee and cover it with a tablespoon of ghee
Cover the dough with a kitchen towel
Keep in a warm place for an hour
Dough if proofed
Start kneading the proofed dough
Add 2 tablespoons cut onion, mix it in
Add 4 tablespoons congress masala- Check link above
Add 1 tablespoon ghee and coat well
Divide the dough, I cut it to 10 buns
Tuck the dough and form a round
Cover with 4 tablespoons of milk
Proof for a 2nd time for 20 minutes
Pre heat oven at 180C for 20 minutes
Bake in the oven for 25 minutes
The last 5 minutes take the buns out, coat them in ghee
Pop them back in the oven, this helps in browning them
Take them out of the oven and let it cool
Serve when it is hot!
