Take 2 packs of iD paneer, cut them into pieces, this is the softest paneer
Add them in a food processor jar
Next, add 1 cup of thick curds, I have used homemade curds, I’m in Hyderabad, the curd really does set thick here,
Next add ½ cup Amul whipping cream
Put the cut paneer, then add the curds and after that the whipping cream
Next take a larger bowl and add a smaller bowl in the middle, put a strainer above and cheese cloth on top,
Strain the mixture from the food processor jar and store it in the fridge overnight any excess water will release by the morning
Next, you need to pulse 200 grams of digestive biscuit and 1/4 cup melted butter in a food processor jar, this form the base of the cream cheese cake
Mix the mixture in a bowl thoroughly,
Transfer to a 7 inch springform pan, flatten using a bowl and spread the base evenly
Store in the fridge until you’ve prepared the rest of the ingredients
In a microwave melt 240 grams of chocolate in a microwave, add 2 tablespoons of butter to this if it doesn’t melt easily. Try buying a good brand of chocolate.
In a deep bowl add 400grams of cream cheese and add 1 cup to sifted icing sugar and fold it in
Add 1/2 a teaspoon Ossoro vanilla essence
While the chocolate is cooling down
Add 1/2 cup of chilled whipping cream into a food processor and blitz it
Add whipped cream to the cream cheese mixture and fold it in
Next add the melted chocolate and mix all the ingredients well, by whipping it using a rubber spatula
Continue mixing the chocolate in, until it is mixed completely
Take the set base out of the fridge and pour the chocolate cream cheese mixture
Let it set in a fridge for a minimum of 5 hours, you can put it in a freezer as well
Next we need to prepare the chocolate ganache.
In a microwave oven, heat 1/3 cup cream
In a mug add 80 grams of chocolate,
Pour the hot cream into the mug with chocolate, let it sit for a minute
Stir the cream and chocolate mixture, until all the chocolate is melted
Let it cool for 10 minutes and pour it over the cream cheese mixture
The cake takes around 1-2 hours to set in a fridge, give it that much of time
I was in a hurry, so I cut it in advance
The cake is now ready to serve!
