Desi Italian, we as Indians like Indianising a lot of things, this recipe is one of them. When we make Italian at home, our complaint always remains the same. The taste is rather flat for our pallet. We like to spice things up a little. I added some jalapeños, before baking them. Unfortunately this time I didn’t have any mozzarella cheese at home, usually right on top I add a tablespoon spoon or so, it gives it a nice tangy flavour and a crunchy crust.
I made this recipe on occasion of Mother’s Day, both my Mum and Mom In Law love white sauce pasta. The taste of the sauce is amazing, I like it too! It is really worth buying cheddar cheese for the recipe, the sauce becomes even creamier.
You don’t need to bake this recipe if you don’t want to, I prefer baking as it is healthier. The recipe is ready rather quickly. The pasta you can choose what kind you want or like, just follow the instructions on the packet.

Baked white sauce pasta

Ingredients
- 4 tablespoons unsalted cooking butter
- 4 tablespoons of Maida or APF
- 2.5 cups of heated milk
- half a grated nutmeg
- 1 teaspoon of salt
- 1 cup of freshly grated cheddar cheese
- 2 tablespoons of pizza or pasta seasoning
- 1 tablespoon of Olive oil
- 250 grams of pasta per your choice
- 16-20 jalapeños
- Veggies if you choose
Instructions
Steps to make Baked White Sauce Pasta Indian Style
- In a pan add 4 tablespoons of unsalted butter, let the butter melt
- Add 4 tablespoon of maida or all purpose flour and mix well
- It needs to bubble slightly
- Next add 2.5 cups of heated milk and keep stirring
- Add 2 teaspoons of freshly ground pepper
- Add half a grated nutmeg
- Add 1 teaspoon of salt
- Add 1 cup of freshly grated cheddar cheese
- Add 2 tablespoons of pizza or pasta seasoning
- Turn off and let it cool
- Pre heat your oven to 180C for 20 minutes
- Boil 250 grams of pasta of your choice
- Follow the instructions on the packet
- Drain the pasta add 1 tablespoon of olive oil to coat
- I’ve used 4 buttered ramekins
- Put some pasta in a ramekin or a baking dish and add the pasta sauce
- I’ve added 4 jalapeños, since we like spicing things up!
- Add the sauce then add some more pasta on top
- Top it off with some more sauce
- Season it on the top
- You can add some boiled veggies as well
- Add them into the preheated oven and bake for about 20-25 minutes
- After it starts to brown take it out
- Let it cool before eating
- I enjoyed it with a summer veggies salad
