The first time my mother made this recipe, I really enjoyed the taste! There is a phrase in Kannada called Hulli Uppu and Khara, it has the right amount of sourness, salt and spice! When I started to cook I wrote all my mother’s recipe’s down in a book and took photos of the book it self, so I have access to it, wherever I go!
This recipe is ready very quickly and doesn’t even require a blender! So this is one of those recipes you can make without power too, during power cuts. I have added only 1 gobhi or cauliflower, the dish serves 5 people easily, with the addition of peas and potatoes as well.
There are so many recipes for Gobhi or Cauliflower out there, I prefer it with a gravy, this one has a thin gravy, add as much as you like. I prefer gravies with my roti’s, not dry curries.

Aloo Mattar Gobhi Rasedar

Ingredients
- 1 cauliflower
- 2 potatoes
- 2 tomatoes
- 1 onion
- 2 inch ginger
- 4-6 tablespoons oil
- 2 teaspoon jeera or cumin
- 1/4 teaspoon turmeric
- 1 teaspoon salt
- 1 cup frozen peas
- 1 measure of water
- 1 teaspoon chilli powder
- 1 tablespoon Garam Masala
- Half a measure more water
- 4 teaspoons Tomato Purée
- 1 teaspoon Aamchoor Powder
- Half a measure more water
- Salt per taste
- Fresh coriander
- 1 tablespoon Kasuri Methi or dried Fenugreek leaves
- Fresh Coriander for garnishing
Instructions
- Steps to make Aloo Mattar Gobhi Rasedar
- Clean and cut 1 cauliflower, I usually soak it in warm salted water
- Cut 2 potatoes fine
- Cut 2 tomatoes fine
- Cut 1 onion finely
- Cut 2 inch ginger finely
- In a hot pan add 4-6 tablespoons oil
- Add 2 teaspoon jeera or cumin
- Add 1 cut onion, stir fry it
- Add cut ginger
- Let the onion turn pink
- Add 1/4 teaspoon turmeric
- Add cut tomatoes, stir fry for 5 minutes
- Add 1 teaspoon salt and mix
- Add cut potatoes and stir fry
- Cover with lid and let it cook for 5 minutes
- Add 1 cup frozen peas
- Cover with the lid for 5 minutes again
- Add 1 measure of water
- Add 1 teaspoon chilli powder and mix
- Add 1 tablespoon Garam Masala
- Stir well
- Add the clean and cut cauliflower or gobhi
- Mix well to coat the masala evenly
- Add half a measure more water and mix
- Cover with the lid and let it cook for 5 minutes
- Add 4 teaspoons Tomato Purée
- Add 1 teaspoon Aamchoor Powder
- Add half a measure more water and add salt per taste
- Add some fresh coriander
- Add 1 tablespoon Kasuri Methi or dried Fenugreek leaves
- Garnish with fresh coriander right before serving
- The dish is now ready to serve
