Several years ago when we had been on a family trip to Ooty, we bought several spices. Some we definitely had heard off and some that we had never used. Star anise was one of them we had never used, the aroma is amazing. We had no idea what to use it for, so my mom and I made star anise spiced sweet potato. We had deep fried it, this is something I really don’t like. So I try to bake everything possible, rather than deep frying. This recipe is a mix of a few recipes that I’ve made over the past few years. Winter time here Sweet Potato is available in plenty and it tastes amazing just boiled as well.
The recipe is really tasty and warming as well, perfect as a starter or a snack in the evening. Cutting and peeling takes a little time, but the effort is worth it. You can keep the skin as well, if you like the taste though I have peeled it for this video. Try using olive oil, this is the best oil for baking recipes, butter is not required for this recipe. The recipe is vegan and veggie friendly.
The ingredients are very few, but the taste is amazing, it is perfect for a cold winter’s day! Let me know in the comments below if you make the recipe?
