Lemon Butter Biscuit

Where do I begin? This recipe was something I thought would be a little different. I was bored with the usual salted and sweet butter biscuits and their variations! I love butter biscuits in general. Something always seems right in the world when I make them. Can’t describe it in any other manner! Today is my wedding anniversary, it has been 4 years! I’ve always had Anirudh as my taste tester, whenever I have cooked a meal and he is free, I’ve always called him to taste whatever it is I’m making. He’s been so supportive while making all these videos too. He got me the amazing stand mixer featured in this video. I’ve  been looking for a good one, for a long while now. It’ll be easier to bake larger quantities as well now!  Now coming back to the recipe. I’ve always liked citrusy flavoured stuff, lemon cheese cake, lemon juice or how we say nimbu panka. So I was wondering how exactly I can make a biscuit that is citrusy. Something different, I was bored of using Vanilla and chocolate. I would suggest, if you make this recipe, try getting the most yellow of lemons 🍋 you can find! This gives it and extra oomph factor to it. 
When life gives you lemons, make lemon biscuit?
The biscuits take around 20 minutes to bake, they need to turn light brown. Lemon Butter Biscuit

Ingredients
  

  • 1 cup butter about 200-250 grams of unsalted butter at room temperature
  • 2 and 1/4 cups maida
  • 1/2 cup White Sugar
  • 1/4 cup Powdered Brown Sugar gives it a nutty taste and a deeper golden brown colour
  • 1 tsp Ossoro Indian Lemon Essence
  • Zest of two lemons
  • 1 tbsp water
  • 1 tsp baking powder
  • 1/4 tsp Salt

Instructions
 

  • Steps for making the biscuit:
  • Add 1 cup of butter in a bowl, I have used a new stand mixer for this recipe
  • Add 1/2 cup of white sugar to this,
  • Next, add 1/4 cup soft brown sugar to this, this gives it s a nutty taste
  • I have used my new stand mixer,
  • Using the whipping attachment, the sugars and butter are creamed well, this takes around 5 minutes!
  • Bring all the ingredients to the centre of the bowl and mix again
  • Add 1 teaspoon Ossoro Indian lemon essence and add the zest of 2 lemons and mix again
  • Now start adding the flour in batches
  • I’ve changed it to the beating attachment and added 1 tablespoon of water
  • Add 1 teaspoon baking powder
  • Add 1/4 teaspoon of Salt
  • Mix all the ingredients well using a spatula
  • Line your baking tray with baking or parchment sheet after applying a brushing of butter
  • Now using a tablespoon as measure, partition the dough and roll it round
  • Using a fork, prick holes, this helps in cooking them through and through
  • Pop them into a preheated oven 180C for a maximum of 20 minutes
  • Take out of oven and let it cool for 10 minutes and then serve
  • Prepare the remaining dough the same way, I got around 20 biscuits with this recipe
  • Take out of oven and let it cool for 10 minutes and then serve
