Steps for making the biscuit:
Add 1 cup of butter in a bowl, I have used a new stand mixer for this recipe
Add 1/2 cup of white sugar to this,
Next, add 1/4 cup soft brown sugar to this, this gives it s a nutty taste
I have used my new stand mixer,
Using the whipping attachment, the sugars and butter are creamed well, this takes around 5 minutes!
Bring all the ingredients to the centre of the bowl and mix again
Add 1 teaspoon Ossoro Indian lemon essence and add the zest of 2 lemons and mix again
Now start adding the flour in batches
I’ve changed it to the beating attachment and added 1 tablespoon of water
Add 1 teaspoon baking powder
Add 1/4 teaspoon of Salt
Mix all the ingredients well using a spatula
Line your baking tray with baking or parchment sheet after applying a brushing of butter
Now using a tablespoon as measure, partition the dough and roll it round
Using a fork, prick holes, this helps in cooking them through and through
Pop them into a preheated oven 180C for a maximum of 20 minutes
Take out of oven and let it cool for 10 minutes and then serve
Prepare the remaining dough the same way, I got around 20 biscuits with this recipe
