Everyday whenever I was coming out of school, I used to get a distinct aroma, a welcoming aroma of fresh buns. Growing up as a kid in the 90s, we had some simple pleasures, eating this spicy or khara bun was one of them! The bakery near school was very smart, timing their baking exactly to the time school kids are going back home! Any chance I got, I used to pester my parents for this bun!
Birthday parties, there was always a baked item apart from a cake, I used to love having these buns along with spicy potato chips, the local kind not lays or any of those “imported brands”. 90s we loved our local stuff the most, we had no idea what it was to have processed snacks, our parties were simple and fun, the food was always the highlight, apart from the gifts of course! This recipe is very similar to the one I made last year, the taste is more authentic, by adding dil leaves, luckily I was able to get them @Gourmetgarden. Most of my recipes I get my veggies from here! The quality is great and the taste is amazing too!

Masala Bun- Bangalore Style

Ingredients
- 1/2 cup water
- 1/2 cup milk
- 1/4 cup butter
- 2.5 tablespoons sugar
- 2 and 1/4 teaspoons active dry yeast
- 2 cups whole wheat flour
- 1 cup maida or APF
- 2 teaspoons salt
- 1 teaspoon ginger powder
- 2 tablespoons cut curry leaves
- 1 diced green chilli
- 1/2 teaspoon pepper powder
- 1/2 cup cut Dil Leaves
- 2 tablespoons ghee for coating
- Half a cut onion
- 4 tablespoons congress masala peanuts
Instructions
Steps to make Bangalore Style Masala Bun
- In a bowl add 1/2 cup water and 1/2 cup milk
- Warm it in a microwave oven
- In another bowl add 1/4 cup butter and 2.5 tablespoons sugar
- Melt it in the microwave
- Mix them
- Add 2 and 1/4 teaspoons active dry yeast
- Mix well, let it rest for 10 minutes
- In a mixing bowl, add 2 cups whole wheat flour
- Add 1 cup maida or APF
- Add 2 teaspoons salt
- Add 1 teaspoon ginger powder
- Add 2 tablespoons cut curry leaves
- Add 1 diced green chilli
- Add 1/2 teaspoon pepper powder
- Add 1/2 cup cut Dil Leaves
- Mix with your hands
- Yeast should’ve bloomed, mix the yeast mixture in
- Knead till the dough doesn’t stick to the bowl anymore, takes around 3 minutes
- Transfer to a bowl coated in ghee and cover it with a tablespoon of ghee
- Cover the dough with a kitchen towel
- Keep in a warm place for an hour
- Dough if proofed
- Start kneading the proofed dough
- Add 2 tablespoons cut onion, mix it in
- Add 4 tablespoons congress masala- Check link above
- Add 1 tablespoon ghee and coat well
- Divide the dough, I cut it to 10 buns
- Tuck the dough and form a round
- Cover with 4 tablespoons of milk
- Proof for a 2nd time for 20 minutes
- Pre heat oven at 180C for 20 minutes
- Bake in the oven for 25 minutes
- The last 5 minutes take the buns out, coat them in ghee
- Pop them back in the oven, this helps in browning them
- Take them out of the oven and let it cool
- Serve when it is hot!
