Masala Dosa

Equipment

  • 1 Dosa Tawa

Ingredients
  

  • 8 medium sized potatoes
  • 3 medium onions
  • 4 sprigs curry leaves
  • 6 green chillies
  • 6 tbsp oil
  •  2 teaspoons Mustard Seeds
  • 1 tsp hing
  • ½ teaspoon turmeric
  • 1 tsp sugar
  • 1 Juice of 1 lemon
  • Handful fresh coriander
  • 1 packet MTR’s Minute Fresh Dosa Batter
  • 8 teaspoon Ghee
  • 8 teaspoon Oil

Instructions
 

  • Pressure cook 8 medium sized potatoes
  • Cut 3 medium onions
  • 3-4 sprigs of curry leaves
  • Cut 2 inch ginger finely
  • Cut 6 green chillies
  • Peal and mash the potatoes
  • In a pan add 6 tablespoons of oil
  • Add 2 teaspoons Mustard Seeds
  • When the mustard is cracking add cut curry leaves
  • Add cut ginger
  • Add cut green chillies
  • Add 1 teaspoon hing
  • Mix spices well
  • Add diced onions
  • Stir fry till onions turn transparent
  • Add little salt to sweat the onions
  • Add 1/2 teaspoon turmeric
  • Add the mashed potatoes
  • Mix thoroughly
  • Add more oil if required
  • Add salt to taste and mix
  • Add 1 teaspoon sugar and mix
  • Add juice of 1 lemon and mix
  • Add freshly cut coriander
  • I’ve used MTR’s Minute Fresh Dosa Batter for this recipe
  • My mom swears by it and it is available readily
  • Heat a dosa pan
  • Add 1 ladle full of the dosa batter and spread it evenly
  • Add 1 teaspoon oil
  • Add 1 teaspoon ghee
  • Lift to check if it is cooked evenly
  • Next, add the dosa filling in the middle
  • Fold and roll over
  • Add some more ghee on top
  • Serve hot with freshly prepared green chutney
