I love dark chocolate and so does everyone at home and so do many of my friends. Most of my cakes are eggless, this cake is highly customisable, it can be decorated with almost any type icing and ganache! My best friend Deepti, like me loves chocolate mint ice cream and we haven’t found a single store here in Bangalore that makes a chocolate cake with mint icing or ganache! So I made this for her a while ago. The recipe is pretty easy, this has been the base for several chocolate cakes I have made over the years including a chocolate and rum cake. This cake was more rum then chocolate though, but extremely tasty!
As always, I have mixed a few recipes and made into this nice bittersweet cake! This is a perfect birthday cake. Though everyone calls it chocolate mint, the essence used is peppermint. I have also used gel food colouring, by a brand called Sugrain. All natural colouring. I mixed blue and green to get this colour.
