The first time I had this dish, my mouth was on fire and I loved it almost immediately. I had it in a club with my brother and grandad. We had to have it with Coca Cola! The taste was incredible, it was the perfect starter, right amount of spice, just the right taste and extremely tasty. I’m writing about it now and I’m wanting another plate of it again!
A very easy snack, I’ve made it a little healthier by boiling it first before stir frying it. Using a good quality extra virgin olive oil such as Borges Extra Virgin Olive Oil .
I’ve used an Amazon Basics Cast Iron Pan, this is perfect for my videos and very easy to cook in.
The recipe really takes around 20 minutes to cook and prep. I prefer it this spicy, I had it with Coke Zero this time and for dessert I actually had an ice cream sandwich! Total 90s kid vibe here!
Try getting the best baby corn you can, I used Big Basket’s baby corn. It is really clean and you don’t need to peel the cover. I have another baby corn recipe as well, do check it out.

Pepper chilli baby corn

Ingredients
- 250 grams of baby corn
- 4 tablespoons of extra virgin olive oil
- 2 thinly cut onions
- 3 sprigs of spring onion whites
- 1 inch of grated ginger
- 1 tablespoons of Dark Soya Sauce
- Salt per taste around 2 teaspoons
- 1.5 tablespoons of freshly ground pepper
- 1/2 tablespoon of freshly ground star anise
- 3 sprigs of spring onion greens for garnishing

Steps to make Pepper Chilli Baby Corn
- Cut 250 grams of baby corn to the size you like
- In a pot add 1.5 litres of water and boil the cut baby corn till it comes to a rolling boil
- I would say about 10-12 minutes
- This is now at a rolling boil stage, drain the baby corn on a plate
- In a hot frying pan add 4 tablespoons of olive oil
- Next add 2 thinly cut onions and spring onion whites and stir fry
- Next add 1 inch grated ginger, you can add 2-3 cloves of garlic too, I usually don’t
- Add 4 cut green chillies
- Add 3 springs of curry leaves and mix well
- Add salt per taste, I added around 2 teaspoons
- Add 1.5 tablespoons of freshly ground black pepper
- Add 1/2 tablespoon of ground Star Anise
- Add 1 tablespoon of Dark Soya Sauce and Mix
- Next, add the baby corn and mix well
- Coat all the baby corns uniformly with the masala
- You need to fry it for around 5 minutes, you need to keep on stirring it
- I would suggest checking the taste!
- Turn the heat off and garnish it with 3 sprigs of Spring Onion Greens
- The dish is now ready to serve! I enjoyed it with a Coke Zero!
