Very similar to my stuffed capsicum, this recipe is ready real quick. It is an easy low cal snack, that packs a different taste! Pressuring cooking the potatoes are the quickest and baking time is only 20-25 minutes. I would suggest getting the biggest tomatoes you can find, I got mine from @gourmetgarden the tomatoes were really big. I had, had this recipe in a restaurant a while ago and the taste was amazing. The stuffing is ready in around 5 minutes, if you have pizza seasoning you can add some of that as well. I did not remove the cover of the tomatoes, the stuffing has limited amount of mozzarella you can add more as well.   • 4 potatoes cut in half
  • Half a cup of fresh thyme
  • 6-10 large tomatoes
  • 1 tablespoon of dried oregano
  • 1 tablespoon red chilli flakes
  • 1 teaspoon of pepper powder
  • 5-6 teaspoons of mozzarella cheese
  • 2 tablespoons of coking butter
  • Cheese slices

Method

    Steps to make stuffed tomato recipe

    • Pressure cook 4 cut potatoes, I’ve add half a cup of fresh thyme
    • Preheat oven to 180C for 20 minutes
    • I used 6 tomatoes from Gourmet Garden
    • Now prep your tomatoes, cut the tops out and scoop the pulp out
    • I pressure cooked for 1 whistle and 3 minutes
    • Peel the potatoes and mash them
    • Add salt per taste
    • Add 1 tablespoon of dried oregano
    • Add 1 tablespoon red chilli flakes
    • Add 1 teaspoon of pepper powder and mix well
    • Add 5-6 teaspoons of mozzarella cheese and mix
    • Prepare a pan and add a baking sheet or mat
    • Add 1-2 tablespoons of the potato filling
    • Coat the outside with butter
    • I’ve added a slice of cheese on 3 of them
    • Bake at 180C in the middle row for 20-25 minutes
    • Let it cool for 5-10 minutes and enjoy the dish
    • The dish is now ready to serve, I personally liked it with the slice of cheese on top
