Aloo Chilli Dry Recipe

The first time I had this recipe, was again why I was a kid! The taste has stayed with me all these years. A couple of years back, I decided let’s try making it as a starter. The recipe is perfect as a starter, it has the right amount of tanginess and spice. Cold weather warming snack for sure.  You can have a boil aloo recipe if you have only 4 potatoes! This is the easiest recipe I’ve made I feel. It’s the rainy season here in Bangalore, this is perfect for the cold and clammy weather. If you have cooked potatoes, it is ready in 5 minutes! It is a Sunday Recipe. Don’t all of you have a dish you want to have after you’ve had a cold or cough? Something chatpatta? This is that recipe, for me. I used to have this at the club with my family, they’ve always made this dish with garlic though. Most of my recipes I do not add it, we have never used whole garlic at home! Aloo Chilli Dry Recipe

Ingredients
  

  • 4 large potatoes
  • 2 onions
  • 2 inch ginger
  • 4-6 green chillies
  • 4 Spring Onion Whites
  • 5 tablespoons of oil
  • 2 tablespoons of Dark Soya Sauce
  • 2 tablespoons of Maggie Hot and Sweet Ketchup
  • 1 tablespoon of Green Chilli Sauce
  • 1 tablespoon of freshly ground pepper
  • Salt per taste
  • 2 tablespoons of Corn Flour
  • 3 tablespoons oil
  • 4 sprigs of spring onion greens
  • Tomato Ketchup and Green Chilli Sauce for serving

Method

    Steps to make Aloo Chilli Dry Recipe

    • Pressure cook 4 large potatoes
    • While the cooker is cooling, cut 2 onions into petals
    • Grate 2 inch ginger
    • Cut 4-6 green chillies
    • Cut Spring Onion Whites
    • You can add some garlic too
    • In a Pan add 5 tablespoons of oil
    • Add the cut onions
    • Add the grated ginger
    • Add the cut green chillies
    • Stir fry
    • Add Spring Onion Whites
    • Add 2 tablespoons of Dark Soya Sauce
    • Next Add 2 tablespoons of Maggie Hot and Sweet Ketchup
    • Next add 1 tablespoon of Green Chilli Sauce
    • Add freshly ground pepper
    • Add salt per taste
    • Mix all the ingredients
    • Remove and keep aside the base
    • Next peel and cut the potatoes
    • Coat the potatoes with 2 tablespoons of Corn Flour
    • In another pan add 3 tablespoons oil, fry the potatoes
    • Fry till it starts to turn brown
    • Transfer the fried potato to the base
    • Stir fry it for around 8-10 minutes, this way the taste is far better
    • Add 4 sprigs of spring onion greens
    • Serve it on a plate with Tomato Ketchup and Green Chilli Sauce
    • The dish is now ready to serve
